This economic sector, internationally recognized for its unparalleled quality, has been central to the economic and human development processes of various regions in Colombia. However, the strength of coffee production and the international recognition Colombia enjoys do not imply the absence of significant challenges in enhancing the production chain.
For this reason, this book documents various technical and human processes for the utilization of different coffee production by-products. The aim is to generate circular economy processes and provide new sources of income and innovation for small Colombian producers, the very people who have taken Colombian coffee to the next level.
